Sweet Potato Casserole with Brown Sugar and Pecans

Ingredients for casserole:
- 4 cups mashed sweet potatoes
- 1/4 cup brown sugar
- 1/4 tsp. salt
- 1/2 cup Egg Beaters®
- 1 Tbsp. I Can’t Believe It’s Not Butter Light
- 1 tsp. vanilla
- 2 Tbsp. skim milk
Ingredients for topping:
- 1/4 cup brown sugar
- 2 Tbsp. flour
- 1/4 cup chopped pecans
- 1 Tbsp. I Can’t Believe It’s Not Butter Light
Directions
- Combine topping ingredients in a small bowl.
- Stir to combine.
- Set aside.
- Spray a medium casserole dish with non-stick spray.
- Place the casserole ingredients into a large bowl and using a hand mixer beat the ingredients together until mixed.
- Pour into prepared dish.
- Distribute topping evenly over casserole and bake for approximately 45 minutes.
