Sweet Potato Biscuits

Ingredients :
- 1 1/2 cup whole white wheat flour
- 1/2 cup oat bran
- 1 Tbsp. baking powder
- 1 tsp. sea salt
- 4 Tbsp. light butter (50/50 Smart Balance for baking)
- 3/4 cup skim milk
- 1/2 cup mashed sweet potatoes (can use baby food sweet potatoes for a quicker mix)
- 1 Tbsp. sugar
Directions :
- Preheat oven to 450. In a medium bowl, combine flour, oat bran, baking powder and salt.
- Cut the butter into small pieces and add to flour mixture. Mix with hands until mixture is crumbly.
- In a large bowl, mix milk and sweet potato.
- Add flour mixture and stir until dough forms. Turn dough out onto a floured surface and knead two to three times, sprinkling with additional flour as needed to prevent sticking.
- Flatten dough and cut into rounds. Top with a sprinkle of sugar.
- Bake on a cookie sheet for 8-10 minutes.
