Roasted Garlic and Chili Pepper Sweet Potatoes
A simple side dish packed with beta-carotene and fiber pairs perfectly with your next family meal. Garlic, thyme and red pepper flakes add plenty of flavor with no unwanted calories.

Ingredients :
- 2 pounds red-skinned sweet potatoes
- 2 Tbsp olive oil
- 4 large garlic cloves, minced
- 1/3 cup fresh thyme leaves
- ½ tsp red pepper flakes
Instructions :
- Preheat oven to 375 degrees.
- Peel and cut the sweet potatoes into one-inch pieces and put in a large bowl.
- Combine remaining ingredients and toss.
- Put potatoes in a 9×13-inch baking dish or a large lined baking pan.
- Place on top rack of oven and roast until tender and slightly browned, about 25-30 minutes.
- Serve warm or at room temperature, garnished with thyme sprigs
