Ingredients for Casserole
- 4 cups mashed sweet potatoes
- 1/4 cup brown sugar
- 1/4 tsp. salt
- 1/2 cup Egg Beaters®
- 1 Tbsp. I Can’t Believe It’s Not Butter Light
- 1 tsp. vanilla
- 2 Tbsp. skim milk
Ingredients for Toppings
- 1/4 cup brown sugar
- 2 Tbsp. flour
- 1/4 cup chopped pecans
- 1 Tbsp. I Can’t Believe It’s Not Butter® Light, melted
Directions
- Preheat oven to 375 degrees.
- Combine casserole ingredients in a medium bowl, stir to combine.
- Spray a medium casserole dish with non-stick spray.
- Place casserole mixture into dish, set aside.
- Combine topping ingredients in a small bowl and stir to combine.
- Distribute topping evenly over casserole and bake for approximately 45 minutes.
