Low-Fat Skillet-Fried Potatoes with Chopped Onion
There’s nothing like comfort food. This healthier version of fried potatoes is a wonderful side dish to accompany your favorite meal.

- Nonstick vegetable cooking spray
- 2 Tbsp. canola oil
- 2 lb. potatoes, peeled and thinly sliced
- 1/2 onion, chopped
- 1/4 cup water (added as needed)
- 1/2 tsp. salt
- 1/2 tsp. pepper
Directions
- In a skillet that has been coated with cooking spray, heat oil.
- Add potatoes and onions. Cover and cook until tender, adding water as needed and stirring occasionally to prevent sticking.
- Season with salt and pepper and serve.
