Sweet Potato Biscuits

Ingredients:

1 1/2 cup whole white wheat flour

1/2 cup oat bran

1 Tbsp. baking powder

1 tsp. sea salt

4 Tbsp. light butter (50/50 Smart Balance for baking)

3/4 cup skim milk
-
1/2 cup mashed sweet potatoes (can use baby food sweet potatoes for a quicker mix)

1 Tbsp. sugar
Directions:

Preheat oven to 450. In a medium bowl, combine flour, oat bran, baking powder and salt.

Cut the butter into small pieces and add to flour mixture. Mix with hands until mixture is crumbly.

In a large bowl, mix milk and sweet potato.

Add flour mixture and stir until dough forms. Turn dough out onto a floured surface and knead two to three times, sprinkling with additional flour as needed to prevent sticking.

Flatten dough and cut into rounds. Top with a sprinkle of sugar.

Bake on a cookie sheet for 8-10 minutes.
