Sweet Potato Biscuits

Ingredients:

  • 1 1/2 cup whole white wheat flour
  • 1/2cup oat bran
  • 1 Tbsp. baking powder
  • 1 tsp. sea salt
  • 4 Tbsp. light butter (50/50 Smart Balance for baking)
  • 3/4 cup skim milk
  • 1/2 cup mashed sweet potatoes (can use baby food sweet potatoes for a quicker mix)
  • 1 Tbsp. sugar

Directions:

  1. Preheat oven to 450 F. In a medium bowl, combine flour, oat bran, baking powder and salt.
  2. Cut the butter into small pieces and add to flour mixture. Mix with hands until mixture is crumbly.
  3. In a large bowl, mix milk and sweet potato.
  4. Add flour mixture and stir until dough forms. Turn dough out onto a floured surface and knead two to three times, sprinkling with additional flour as needed to prevent sticking.
  5. Flatten dough and cut into rounds. Top with a sprinkle of sugar.
  6. Bake on a cookie sheet for 8-10 minutes.
