Easy Italian-Inspired Tomatoes with Balsamic Basil Glaze

Ingredients

  • 16 plum tomatoes, halved lengthwise, seeded, but leave core intact 
  • ¼ c olive oil
  • 3 Tbsp. aged balsamic vinegar
  • 2 garlic cloves, minced
  • 2 ½  tsp sugar
  • 1  tsp salt
  • ½ tsp black pepper, freshly ground
  • 10 fresh basil leaves, julienned

Directions

  • Preheat oven to 450.
  • Arrange tomatoes, cut side up, on a sheet pan that has been covered with foil
  • Combine the next six ingredients
  • Pour evenly over the tomatoes
  • Roast 25-30 minutes, or until tomatoes start to caramelize and the flavors are concentrated 
  • Sprinkle with basil and serve warm or at room temperature

Serves: 8 | Serving Size: 2 halves
