Roasted Garlic and Chili Pepper Sweet Potatoes

Ingredients:

2 pounds red-skinned sweet potatoes

2 Tbsp olive oil
-
4 large garlic cloves, minced

1/3 cup fresh thyme leaves
-
½ tsp red pepper flakes
Instructions:

Preheat oven to 375 degrees.

Peel and cut the sweet potatoes into one-inch pieces and put in a large bowl.

Combine remaining ingredients and toss.

Put potatoes in a 9x13-inch baking dish or a large lined baking pan.

Place on top rack of oven and roast until tender and slightly browned, about 25-30 minutes.

Serve warm or at room temperature, garnished with thyme sprigs
Yield: 6-8 servings
