Unbelievably Low-Fat Skillet-Fried Potatoes with Chopped Onion

Nonstick vegetable cooking spray
2 Tbsp. canola oil
2 lb. potatoes, peeled and thinly sliced
1/2 onion, chopped
1/4 cup water (added as needed)
1/2 tsp. salt
1/2 tsp. pepper
In a skillet that has been coated with cooking spray, heat oil.
Add potatoes and onions. Cover and cook until tender, adding water as needed and stirring occasionally to prevent sticking.
Season with salt and pepper and serve.
