Confetti Brown Rice Couscous Recipe Makes a Healthy Grains Dish

Ingredients

1 cup brown rice couscous

2 1/2 cups low sodium chicken or vegetable broth

1 finely chopped red bell pepper

1 bag of broccoli slaw

1/2 tsp parsley
-
1/2 tsp dried thyme

1/4 tsp sea salt

6 ounces of Canadian ham, diced

3 Tbsp Parmesan cheese

2 cups washed raw spinach
Directions:

Spray a large skillet with cooking spray.

Over medium heat, cook bell peppers and broccoli slaw until slightly soft (3-5 minutes).

Add chicken broth, chopped ham, parsley, thyme, salt and bring to a boil.

Add the brown rice couscous, reduce heat and cover for about ten minutes, stirring occasionally.

Remove from heat and stir in cheese and serve over a 1/2 cup portion of leafy spinach greens.
Makes 4 servings.
