Strawberry Grapefruit Spinach Salad

Ingredients
- 3 Tbs. red wine vinegar
- 2 Tbs. frozen apple juice concentrate
- 2 Tbs. vegetable oil
- 1/4 tsp. grapefruit rind (colored part only), grated
- 1/4 tsp. poppy seeds
- 1/8 tsp. dry mustard
- 2 cups grapefruit sections (about 2 medium grapefruit
- 2 cups strawberries, halved
- 1/2 lb. bag spinach, torn in bite-size pieces, or bag of prewashed baby spinach
Directions
- Combine first six ingredients in a jar
- Cover tightly and shake vigorously to combine
- Chill dressing 3 hours
- Combine grapefruit, strawberries, and spinach in a large bowl
- Add dressing, tossing gently to coat
