Fresh and Bright Field Salad with Strawberry and Jicama Recipe

Ingredients

  • 8 cups torn curly lettuce (escarole, endive, red leaf, radicchio, Boston)
  • 1/4 cup fresh basil leaves
  • 1/2 cup chopped green onions
  • 1 cup sliced jicama or Granny Smith apple
  • 1 cup sliced strawberries
  • 1/4 cup almond slices, toasted*
  • Strawberry vinegar or balsamic vinegar (optional; to taste)

*To toast nuts, place them under broiler just until lightly browned and fragrant.  This takes just a couple of minutes, so watch them carefully!

Directions

  1. Combine all ingredients and toss with strawberry or balsamic vinegar. (If using balsamic vinegar, place on greens first and then add jicama or apples so they do not turn brown from the vinegar.)

Yield: 6 Servings; Serving size: 1/6 of salad
