Quick and Easy Apple Oat Bran Muffins with Sunflower Seeds

Ingredients:

  • 1 cup wholewheat flour
  • 1 cup bran
  • 1/2 cup wheat germ
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 2 Tbsp. oil
  • 1/2 cup honey
  • 1 egg
  • 1 cup apple juice
  • 1 apple, peeled and grated
  • 1 small handful of raisins or sunflower seeds (optional)

Directions:

  1. Preheat oven to 400 degrees. Mix first five ingredients in a large bowl. In another bowl, mix egg, oil, honey, apple juice and apple.
  2. Add wet ingredients to dry ingredients and stir all together just enough to blend.
  3. Add raisins and sunflower seeds if desired.
  4. Spoon mixture into muffin cups and bake for 20 minutes.
