Stuffed Shells


Ingredients:

  • 3/4 of a 12 oz. pkg. large shells (21 shells)
  • 1 (10 oz.) box frozen chopped spinach thawed & drained
  • 1 onion, chopped
  • 2 teaspoon diet margarine
  • 2 egg whites, beaten
  • 2/3 cup part-skim ricotta cheese
  • 1/2 cup Parmesan cheese
  • 1/2 teaspoon nutmeg
  • 1 (28 oz.) jar meatless spaghetti sauce

Directions:

  1. Cook shells according to directions on package.
  2. Defrost and squeeze excess water from spinach.
  3. In skillet, cook onion in margarine until tender.
  4. Add spinach; heat through.
  5. Combine eggs, ricotta cheese, Parmesan cheese, nutmeg and spinach mixture.
  6. Pour half the meatless spaghetti sauce in a baking dish.
  7. Stuff shells with filling; arrange in dish and top with remaining sauce.
  8. Bake in 350 degrees, preheated oven for 30 minutes.
