Stuffed Shells |

Ingredients:
- 3/4 of a 12 oz. pkg. large shells (21 shells)
- 1 (10 oz.) box frozen chopped spinach thawed & drained
- 1 onion, chopped
- 2 teaspoon diet margarine
- 2 egg whites, beaten
- 2/3 cup part-skim ricotta cheese
- 1/2 cup Parmesan cheese
- 1/2 teaspoon nutmeg
- 1 (28 oz.) jar meatless spaghetti sauce
Directions:
- Cook shells according to directions on package.
- Defrost and squeeze excess water from spinach.
- In skillet, cook onion in margarine until tender.
- Add spinach; heat through.
- Combine eggs, ricotta cheese, Parmesan cheese, nutmeg and spinach mixture.
- Pour half the meatless spaghetti sauce in a baking dish.
- Stuff shells with filling; arrange in dish and top with remaining sauce.
- Bake in 350 degrees, preheated oven for 30 minutes.
