Salmon Croquettes


Ingredients:

  • 1 (15 1/2 oz.) can salmon drained & flaked
  • 2 tablespoon onion, grated
  • 4 egg whites beaten until frothy & divided
  • 1/8 teaspoon pepper
  • 1/4 teaspoon salt
  • 1/2 cup bread crumbs

Directions:

  1. Place salmon in a colander and drain for 1 minute.
  2. Combine salmon, onion, 2 beaten egg whites, salt, pepper and 1/2 of bread crumbs; stir well.
  3. Divide mixture into 6 equal portions.
  4. Dip each croquette in remaining egg white mixture and then in remaining bread crumbs.
  5. Bake croquettes in preheated 350 degree oven for 25 to 30 minutes or until crust is brown.
