Salmon Croquettes |

Ingredients:
- 1 (15 1/2 oz.) can salmon drained & flaked
- 2 tablespoon onion, grated
- 4 egg whites beaten until frothy & divided
- 1/8 teaspoon pepper
- 1/4 teaspoon salt
- 1/2 cup bread crumbs
Directions:
- Place salmon in a colander and drain for 1 minute.
- Combine salmon, onion, 2 beaten egg whites, salt, pepper and 1/2 of bread crumbs; stir well.
- Divide mixture into 6 equal portions.
- Dip each croquette in remaining egg white mixture and then in remaining bread crumbs.
- Bake croquettes in preheated 350 degree oven for 25 to 30 minutes or until crust is brown.
