Rich & Fudgy Brownies


Ingredients:

  • 2/3 cup unsweetened cocoa powder
  • 1/3 cup all-purpose flour
  • 1/3 cup canola oil
  • cup firmly packed light brown sugar
  • cup sugar
  • 4 large egg whites
  • 2 teaspoons vanilla extract
  • vegetable cooking spray
  • cup raspberry jam, melted (optional)
  • 3 tablespoons powdered sugar

Directions:

1. Preheat oven to 350 degrees.

2. Blend cocoa powder, flour, and baking powder in a small bowl until well combined; set aside.

3. Combine oil, sugar, egg whites, and vanilla in a large bowl; mix with a wire whisk until smooth.

4. Stir in flour mixture.

5. Spread batter in an 8-inch square baking pan that has been coated with cooking spray.

6. Bake for 20 to 22 minutes or until edges just begin to brown and pull away from sides of pan.

7. Do not overcook.

  • 5 grams total fat
  • 1 gram saturated fat

Yield: 16 brownies per pan

For a nice added touch, brush warm jam on top of warm brownies; cool completely in pan on a wire rack. Sift powdered sugar on top of brownies. Cut into squares. (To cut cleaner pieces, chill before cutting.)
