Key Lime Mousse


Ingredients:

  • 2 envelopes unflavored gelatin
  • 1/4 cup cold water
  • 1 cup boiling water
  • 1 cup fresh lime juice
  • 1 tablespoon lime rind, grated
  • 1/2 cup sugar
  • 3 cups nonfat yogurt cheese*

*Make yogurt cheese by draining nonfat yogurt in cheesecloth or coffee filter for 8-10 hours. Two cups yogurt yields 1 cup yogurt cheese.

Directions:

  1. Dissolve gelatin in 1/4 cup cold water.
  2. Add 1 cup boiling water and stir until dissolved.
  3. Add lime juice, rind and sugar.
  4. Stir well. Mix in yogurt cheese until smooth (food processor works well).
  5. Pour into a deep, 9-inch pie pan, or pour into small individual serving-size containers.
  6. Chill until firm.
