Chicken Salad


Ingredients:

  • 3 cups cooked, diced chicken breast (grilled chicken is best)
  • 1 1/2 cups celery, diced
  • 1/2 cup scallions, diced
  • 1/4 cup fresh parsley, minced
  • 1 cup water chestnuts, diced
  • 1 apple, diced
  • 2 tablespoons whole-grain mustard
  • 1/2 cup low-fat buttermilk
  • 2 1/2 tablespoons light mayonnaise
  • 2 1/2 tablespoons plain nonfat yogurt
  • 1 1/2 tablespoons lemon juice
  • Pinch of salt
  • Freshly ground black pepper, to taste

Directions:

Mix first 6 ingredients together and set aside. Mix remaining ingredients in a separate bowl and add to chicken mixture.

Yield: 15 servings
