Chicken Salad |

Ingredients:
- 3 cups cooked, diced chicken breast (grilled chicken is
best)
- 1 1/2 cups celery, diced
- 1/2 cup scallions, diced
- 1/4 cup fresh parsley, minced
- 1 cup water chestnuts, diced
- 1 apple, diced
- 2 tablespoons whole-grain mustard
- 1/2 cup low-fat buttermilk
- 2 1/2 tablespoons light mayonnaise
- 2 1/2 tablespoons plain nonfat yogurt
- 1 1/2 tablespoons lemon juice
- Pinch of salt
- Freshly ground black pepper, to taste
Directions:
Mix first 6 ingredients together and set aside. Mix remaining
ingredients in a separate bowl and add to chicken mixture.
Yield: 15 servings
