Chicken Bow Tie Pasta


Ingredients:

  • ¼ cup sun-dried tomato bits (without salt or oil)
  • ½ cup hot water
  • 1 ¼ teaspoon basil
  • ¼ teaspoon salt
  • ¼ teaspoon garlic powder
  • 3 Tablespoons white wine vinegar
  • 2 teaspoons olive oil
  • 1/8 teaspoon Tabasco sauce
  • 2 ½ cup bow tie pasta (farfalle)
  • Nonstick vegetable cooking spray
  • 1 lb chicken breast, cut into small pieces
  • 1 green bell pepper, chopped into small pieces
  • 1 Tablespoon Parmesan cheese

Directions:

  1. Combine sun-dried tomato bits and hot water in a bowl; cover and let stand 10 minutes.
  2. Add basil and next 5 ingredients; stir well and set aside.
  3. Cook pasta according to package directions; set aside.
  4. Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot; add chicken and sauté 5 minutes or until lightly browned.
  5. Add bell pepper; sauté an additional 5 minutes or until chicken is done.
  6. Combine chicken mixture, pasta and tomato mixture in a large bowl; toss gently.
  7. Serve warm with Parmesan cheese lightly sprinkled on each serving.
