Chicken Bow Tie Pasta |

Ingredients:
- ¼ cup sun-dried tomato bits (without salt or oil)
- ½ cup hot water
- 1 ¼ teaspoon basil
- ¼ teaspoon salt
- ¼ teaspoon garlic powder
- 3 Tablespoons white wine vinegar
- 2 teaspoons olive oil
- 1/8 teaspoon Tabasco sauce
- 2 ½ cup bow tie pasta (farfalle)
- Nonstick vegetable cooking spray
- 1 lb chicken breast, cut into small pieces
- 1 green bell pepper, chopped into small pieces
- 1 Tablespoon Parmesan cheese
Directions:
- Combine sun-dried tomato bits and hot water in a bowl;
cover and let stand 10 minutes.
- Add basil and next 5 ingredients; stir well and set aside.
- Cook pasta according to package directions; set aside.
- Coat a large nonstick skillet with cooking spray; place
over medium-high heat until hot; add chicken and sauté
5 minutes or until lightly browned.
- Add bell pepper; sauté an additional 5 minutes
or until chicken is done.
- Combine chicken mixture, pasta and tomato mixture in a
large bowl; toss gently.
- Serve warm with Parmesan cheese lightly sprinkled on each
serving.
