Whole Wheat Banana Nut Bread


Ingredients:

  • 1/4 cup vegetable oil
  • 1/2 cup sugar
  • 1/2 cup egg substitute; or 4 egg whites 5 medium bananas (1 1/2 cup) mashed 2 cup wholewheat flour
  • 1 tablespoons baking powder
  • 1/2 cup walnuts, chopped Nonstick vegetable cooking spray

Directions:

  1. Preheat oven to 350 degrees.
  2. Cream oil and sugar.
  3. Add egg substitute or egg whites; beat 3 to 5 times.
  4. Stir in bananas.
  5. Blend in Flour and baking powder.
  6. Stir in walnuts; pour into a 9x5-inch loaf pan sprayed with cooking spray.
  7. Bake for 75 minutes.

Yields: 20 servings
