In 1970, with a young daughter and pregnant wife, I left a promising career in the military to open a private practice in Dallas, Texas, a city in which I had never lived. Wholewheat Banana Nut Bread

Ingredients:
¼ cup vegetable oil
½ cup sugar
½ egg substitute; or 4 egg whites
5 medium bananas (1 ½ cup), mashed
2 cup wholewheat flour
1 tablespoon baking powder
½ cup walnuts, chopped
Nonstick vegetable cooking spray

Directions:
  1. Preheat oven to 350 degrees.
  2. Cream oil and sugar.
  3. Add egg substitute or egg whites; beat 3 to 5 times.
  4. Stir in bananas.
  5. Blend in Flour and baking powder.
  6. Stir in walnuts; pour into a 9x5-inch loaf pan sprayed with cooking spray.
  7. Bake for 75 minutes.

Yield: 20 servings

Per Serving (1 slice):

130 calories, 5 gm fat, 3 gm protein, 21 gm carbohydrates, 0 mg cholesterol, 70 mg sodium, 2 gm dietary fiber

NOTE: Let nut breads and other quick breads stand for 10 minutes before removing from the pan to allow them to become firmer. Do not cool completely in the pan or they will become soggy.
