A Message from Dr. Cooper

According to Prevention magazine, at least two thirds of Americans feel stressed at least once a week. That was before September 11. I am confident that statistic is much higher now due to the developments both here and abroad. In this issue of The Wellness Insider, we bring you several articles to give you tools to get a handle on your stress levels.

Stress can be both positive and negative. Without at least some stress, life would be quite boring. Hans Selye, the late stress researcher, once asked, "What would life be with no runs, no hits, and no errors?" The body needs at least some stress in order to remain sharp and alert. However, bad stress can be devastating and even deadly.

Weekly Recipe
Zucchini Dip

Ingredients:

  • 3 medium zucchini, chopped
  • 1/2 cup V8 juice (or tomato)
  • 1 medium onion, chopped
  • 1/8 teaspoon dried basil, crushed
  • 1 (8 ounce) package Neufchatel cheese
  • Curry, to taste

Directions:

  1. In a saucepan combine the zucchini, V8 juice, onion and basil.
  2. Simmer covered for 10 minutes.
  3. Turn mixture into blender container.
  4. Add the cheese and curry.
  5. Cover and blend until mixture is thoroughly combined.
  6. Remove from blender.
  7. Cover and chill.
  8. Serve with desired vegetable dippers.

Per Serving:
25 Calories, 1 g Protein, 2 gm Total Fat, 1 gm Saturated Fat, 6 mg Cholesterol (dietary), 0 gm Fiber (dietary), 33 mg Sodium
