Gourmet Burritos

Ingredients:

  • 1 pound of lean ground beef
  • 2 cloves garlic, minced
  • 3 tablespoons ketchup, divided
  • 2 tablespoons reduced-sodium soy sauce
  • 1/3 cup minced green onions
  • 1/3 cup minced fresh cilantro
  • 1 tablespoon grated fresh ginger
  • 1 (15-ounce) can black beans,
    drained and mashed
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground red pepper
  • 6 (8-inch) flour tortillas, heated
  • 12 to 18 spinach leaves, trimmed
  • Vegetable cooking spray

Toppings:

Plain nonfat yogurt
Diced tomatoes
Shredded lettuce
Cilantro leaves

Directions:

  1. Cook ground beef and garlic in a large skillet until browned, stirring to crumble. Drain in a colander; pat meat dry with paper towels.
  2. Return to skillet, and stir in 2 tablespoons ketchup, soy sauce, green onions, cilantro and ginger; cook over medium heat, stirring frequently, until mixture is hot. Remove from heat; cover to keep warm.
  3. Combine beans, remaining ketchup, cumin and red pepper in a small saucepan; cook over medium-low heat, stirring constantly, until hot.
  4. To serve, arrange 2 or 3 spinach leaves on each tortilla; spread evenly with bean mixture, and top with ground beef mixture. Roll up and serve immediately with desired toppings.

Yield: 4 servings

Per Serving:

59 calories, less than 1 gm of fat, 4 gm protein, 10 gm carbohydrates, 1 mg cholesterol, 145 mg sodium, 0 gm dietary fiber
