Burritos
Ingredients:
-
1 pound of lean ground beef
-
2 cloves garlic, minced
-
3 tablespoons ketchup, divided
-
2 tablespoons reduced-sodium soy sauce
-
1/3 cup minced green onions
-
1/3 cup minced fresh cilantro
-
1 tablespoon grated fresh ginger
-
1 (15-ounce) can black beans,
drained and mashed
-
1/2 teaspoon ground cumin
-
1/4 teaspoon ground red pepper
-
6 (8-inch) flour tortillas, heated
-
12 to 18 spinach leaves, trimmed
-
Vegetable cooking spray
Toppings:
Plain nonfat yogurt
Diced tomatoes
Shredded lettuce
Cilantro leaves
Directions:
-
Cook ground beef and garlic in a large skillet until browned, stirring to
crumble. Drain in a colander; pat meat dry with paper towels.

Return to skillet, and stir in 2 tablespoons ketchup, soy sauce, green onions,
cilantro and ginger; cook over medium heat, stirring frequently, until mixture
is hot. Remove from heat; cover to keep warm.
-
Combine beans, remaining ketchup, cumin and red pepper in a small saucepan;
cook over medium-low heat, stirring constantly, until hot.
-
To serve, arrange 2 or 3 spinach leaves on each tortilla; spread evenly with
bean mixture, and top with ground beef mixture. Roll up and serve immediately
with desired toppings.
