Black Bean Soup

Ingredients:

  • 2 cups dried black beans
  • 5 cups water
  • 1 onion, chopped
  • 1 rib celery, thinly sliced
  • 2 cloves garlic, pressed
  • 1/4 cup fresh cilantro, chopped
  • 1/8 teaspoon dry mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup dry sherry

Directions:

  1. Cover beans with water and soak overnight; drain.
  2. Add 5 cups water, onion, celery, garlic, cilantro, mustard, salt and pepper.
  3. Bring to a boil; simmer, covered for 3 1/2 to 4 hours, or until beans are tender.
  4. Add sherry the last 15 minutes of cooking.
  5. Pour soup into warmed bowls.

Yield: 8 servings

Per Serving: 1 Cup

196 calories, 1 gm fat, 11 gm protein, 34 gm carbohydrates, 0 mg cholesterol, 142 mg sodium, 3 gm dietary fiber
