Best Waldorf Salad

Do you despair when you find a fruit salad on the menu, and then discover that it's made entirely from a can of this and a can of that, bound together by a heaping of non-dairy topping? Our Best Waldorf Salad has fresh fruit, with all the crunch, taste, and texture you look for, wrapped up in a creamy, tasty dressing. Try this low-fat classic either as a salad at the beginning of the meal or as a light dessert!
Ingredients
3 large Red Delicious or Granny Smith apples
2 teaspoons lemon juice (about half a lemon)
1 1/2 cup seedless green grape halves
1 cup finely diced celery
1/3 cup raisins
1/4 cup finely chopped toasted walnuts or pecans
1/4 cup nonfat salad dressing (Miracle Whip) or reduced-calorie mayonnaise
1/4 cup nonfat buttermilk
2 teaspoons sugar
1 ounce blue cheese
Directions
Peel apples; dice. Toss with lemon juice in a large bowl. Add grapes, celery, raisins , and walnuts. Combine salad dressing and remaining ingredients; stir into apple mixture.Cover and refrigerate 1 hour.
Yield: 4 3/4 cups (4 or 5 servings)
