Apple and Sweet Potato Pie

Looking for a unique way to increase your intake of fruits and vegetables? Try this recipe. It's a festival of flavors and nutrients.

Ingredients

1 pound sweet potatoes
1 cup of nonfat milk
¼ cup nonfat plain yogurt
¼ teaspoon allspice
¼ teaspoon cinnamon
2 tablespoons raisins
4 apples, sliced and seeded

Directions

Bake sweet potatoes in 350 degree oven until done (approximately 1 hour). Remove skin from potatoes and mash potatoes with milk, yogurt, spices and raisins. Set aside. Place sliced apples in baking dish, which as been sprayed with a nonstick vegetable spray. Top apple slices with potato mixture. Bake at 350 degrees for 35 minutes.
