Apple Muffins

Apple muffins are quick and easy to prepare. A muffin with a container of yogurt would be a wonderful “breakfast-on-the-run,” or you could have the muffin alone for an afternoon snack. With a few less than 150 calories, 4 grams protein, 4 grams fiber, and 4 grams fat, our homemade muffin is a nice alternative to a lower-calorie energy/snack bar.
Ingredients
1 cup whole wheat flour
1 cup bran
1/2 cup wheat germ
1 teaspoon baking soda
1 teaspoon cinnamon
2 tablespoons oil
1/2 cup honey
1 egg
1 cup apple juice
1 apple, peeled and grated
1 small handful of raisins or sunflower seeds (optional)
Directions
Preheat oven to 400 degrees. Mix first five ingredients in a large bowl. In another bowl, mix egg, oil, honey, apple juice, and apple. Add wet ingredients to dry ingredients and stir all together just enough to blend. Add raisins and sunflower seeds if desired. Spoon mixture into muffin cups and bake for 20 minutes.
Yield: 12 servings (1 muffin)
