Festive Spinach Dip

Ingredients
1 (12 ounce) container low-fat cottage cheese
1 (10 ounce) box frozen chopped spinach, thawed and drained
1/2 cup light sour cream
1/4 cup dry vegetable soup mix
3 teaspoons onion, grated
1 teaspoon lemon juice
1 (8 ounce) can chopped water chestnuts, drained

Directions
Position knife blade in food processor bowl; add cottage cheese.  Process until smooth, scraping sides of processor bowl once; place in a medium bowl, and set aside.  Squeeze excess water from spinach.  Add spinach and remaining ingredients to cheese mixture; stir well.  Cover and refrigerate 3 hours.  Serve with crackers, bread sticks, or raw vegetables.

Yield:  3 cups (48 tablespoons)
